Deliciously Fluffy Pumpkin Pancakes to Celebrate Fall

Fall is my favorite season. Everything about it appeals to me, the weather, the colors, and the food. When I owned a bed and breakfast, I was on the lookout for delicious and different breakfast ideas. Most people want their standard foods in the morning, no surprises.

I introduced my first large group of guests to pumpkin pancakes. They were a hit. I also punched up an alternative syrup with pecans and a touch of butter and cinnamon. If your family is partial to pumpkin, they might like a surprise during the holidays.


In my family saga series, Sabine, Mrs. Emily runs a bed and breakfast in the final novel, Secrets of Dunn House. I shared my recipe with her. I'm in the process of revising and editing this series with my helpful critique group. We're working on Secrets of Dunn House now. Hopefully, by the end of the year, I'll be able to compile all of the novels into one series download. In the meantime, here we are in October, and today I spotted pumpkins at the nursery. Patron’s Pumpkin Pancakes

 

2 1/3 c. Bisquick Original                                     ¼ t. ground cinnamon

1/3 c. pumpkin                                                 ¼ t. ground nutmeg

1 ¼ c. milk                                                      ¼ t. ground ginger

2 T. sugar                                                        2 eggs

 

Mix ingredients until well blended.  Pour batter by slightly less than ¼ cupful onto hot griddle.  Cook until edges are dry.  Turn, cook until golden brown.

 

Maple Pecan Syrup:  1 c. maple flavored syrup, 1 T. butter, ¼ c. chopped pecans.  Heat syrup and margarine until margarine is melted, remove from heat and add pecans.
